Nepali Tama (Bamboo Shoot)

Tama is fermented bamboo shoot, sliced thin with a sour, slightly funky flavor that mellows once cooked into a dish. It is most often simmered into tama curry with potato and black-eyed peas (tama aloo bodi), a classic everyday Nepali dish. Refrigerate the jar once opened.
