Dalle Khursani in Brine

Dalle khursani are small, round chili peppers from the hills of Nepal, among the hottest in everyday cooking, preserved whole here in a salted brine. A single pepper, or a spoonful of the brine itself, can be stirred into dal, achar, or noodles for a sharp burst of heat. Handle with care, these are extremely spicy, and refrigerate the jar after opening.
